Thai 'gai yang' is grilled chicken with some snazz
By Matthew Amster-Burton,
ERIKA SCHULTZ / THE SEATTLE TIMES
Cilantro root, garlic and lots of peppercorns zing up the sauce that defines the Thai version of grilled chicken, gai yang
JOIN ME for an evening at Rajdamnern Boxing Stadium, Bangkok. We'll sit in the balcony and look down through chain-link fencing at the two muay thai fighters beating each other bloody in the ring. All around us, the audience shouts and gestures. They are placing bets. It's incomprehensible if you don't speak Thai. It's incomprehensible if you do speak Thai: Arguments break out over what, exactly, that hand signal meant.
The fight is over. Money is exchanged. Time for dinner. Everyone has the same dish in mind: gai yang, grilled chicken. There's a row of restaurants just outside the stadium specializing in nothing else. At Likhit Gaiyang, the waiters quiz you like a muay thai bettor. "You want grilled chicken? How many orders?"

Indian flavour world over
Caucasians as well as Asians are enjoying the concept of Indian cooking and look forward to trying out novel Indian cuisine.
At 6.00 pm, the fast food restaurant is crowded. Token numbers are being called out over the music being played on the jukebox. There is animated chatter all around as aromas of dosas, bhaturas and utthappams waft in the air. Komala's restaurant in Singapore is a 'not to be missed' or 'been there done that' - whichever way you perceive it - experience by tourists as well as locals.
The vegetarian fast food joint is popular amongst the Chinese, Malays and other races. It has since opened branches within Singapore as well as Indonesia, Colombo, Kuala Lumpur, Muscat and Dubai. The fact that this restaurant has become a brand shows that Indian cuisine has evolved from the usual chicken tikka and curry.
Caucasians as well as Asians are enjoying the concept of Indian cooking and look forward to trying out novel Indian cuisine. Piangji Vinagupta had opened a South Indian restaurant in Bangkok called the Bangkok Brindavan in the early 90s. Idlis, dosas were served to expat Indians as well as locals much before the concept caught on elsewhere. Indian food had always been associated with Punjabi and Mughlai cuisine.

Buddhist Thai food delights Malaysia's Muslim palate
At "To Dine For", a restaurant chain serving Malaysia's Muslims the cuisine of pork-loving Buddhist Thais, religion is no barrier to success.
Businessman Thanee Laivarintr, a former architect, has won a national Malaysian award for best Halal Asian restaurant, for "To Dine For", the top outlet in his chain of 13 fine-dining eateries in Malaysia, a Muslim country with strict halal rules.
Halal, an Arabic word meaning permissible, forbids consumption of pork, blood and alcohol, and any other meat must be slaughtered according to Islamic rites.
Just like in neighboring Thailand, Thanee's best-seller in Malaysia is a fiery dish known as tom yum, a fragrant soup steaming with chilies, although Malaysians like it with prawns instead of other meat.
